Our First Chick Pea Flour Cookies!

 Chickpea Flour Cookies!

I made my way over to Sartaj Flour yesterday (there's a permanent link on the right hand side of my blog and picked up my first bag of chick pea stone ground flour! 100% chick peas, no additives, local flour! It was my first time using chick pea flour. Jade and I made lots of cookies for our Baking Table at the Christmas Bazaar at New Song Church this Saturday, Dec. 5th, 2009, from 8 AM to 5 PM. Jade also made Chocolate Chip, Chocolate Oatmeal, and Jasmin and I made Shortbread and decorated them. I really like the taste of the chickpea flour. It gives the cookie a chewy, peanuty taste without the peanuts. The flour is very fine, almost like mixing in icing sugar. Hope to see you there! We will also have Maple Syrup products and home made jams and jellies, honey, and a few other goodies! What a great local foodie event!


Here is their recipe from their website:
Chickpea Flour Cookies
2 cups Sartaj Chickpea Flour
2 cups brown sugar
1/2 tsp. Baking soda
1/2 tsp. Baking powder
1/2 tsp. salt
1/2 cup butter
2 eggs
1/4 tsp. vanilla
2/3 cup chocolate chips (optional)
1/3 cup chopped nuts (optional)

Preheat oven to 350F. In a large bowl, combine Sartaj Chickpea flour, baking soda, baking powder and salt. In a separate bowl mix the butter, sugar, eggs and vanilla. Add dry ingredients to wet ingredients. Stir in chocolate chips and nuts. Use a tablespoon to place batter on a greased cookie sheet. Bake for 10 to 15 minutes until dark brown. Enjoy!

PERSONAL NOTES: I found that the cookies only took approx. 6-7 minutes. Also, I cooked them on Parchment Paper and then pulled them off the tray to cool so I could have a quick turn around and put more in the oven. Keep a close eye on the cookies! They cook really easily. I would not bake them until they are dark brown. Light brown is the longest I would keep them in the oven.
